Eggplant, Chick Pea Curry

A great way to use eggplant!


1 eggplant - cut into cubes

1 can chick peas - drained

½ of 796mL can chopped tomatoes


red pepper ~ ½ tsp less if you wish it less spicy

turmeric ~ 1 tsp

garam masala ~ ½ tsp

garlic, minced ~ 1 tsp

ginger, ~ 1 tsp


  1. Cut the eggplant into cubes.

  2. Drizzle pan with oil. Add cubed eggplant. Sprinkle black pepper and

  3. Cook in oven or BBQ for 30 minutes or until lightly browned.
