Off Grid Recipe: Protein Bars

I wanted to reduce our single use garbage and know what we are eating so I make our own protein bars.


OFF GRID PROTEIN BARS


INGREDIENTS:

1/2 cup milk

1 cup peanut butter, your choice of smooth or chunky

2 tbsp. real maple syrup or honey, plus more to taste

1/2 cup vanilla, chocolate, or plain whey protein powder

2 cups old fashioned rolled oats, uncooked

1/2 cup chocolate chips (semi-sweet, milk, butterscotch - mix it up!)


INSTRUCTIONS:

  1. In a medium pot, combine milk, peanut butter, and maple syrup/honey over low heat. Stir just until all ingredients are well combined and warmed through. Remove from heat.

  2. Mix protein powder, oats & chocolate chips in a separate bowl.

  3. Pour the warm liquids into the dry ingredients and combine very well with a spatula. If the mixture is too dry, simply add a bit more milk.

  4. Put mixture into a pan (square/round @ 8 x 8). Using a spatula press and even out the mixture into the pan, using firm pressure to compress the mixture into your desired bar thickness.

  5. Refrigerate until cool. Ideally overnight.

  6. Once cool, cut into squares and place in an airtight container, and store in the fridge.
